Early this morning I woke up to an April showers day. It’s the kind of day that’s good for catching up on my cooking, and preparing the vegetables I bought for the week so they’ll be ready to go when it’s time to use them. My fairly new Sunday habit of getting the food ready for the week has resulted in less waste of food and time.
I also made a big pot of red beans and rice. We could probably live on that for most of the week so I may have to freeze some of it. We’ll see how much gets eaten at dinner. M will be making cornbread to go with it, and Mere is making something she calls Buffalo Cauliflower. It will be a delicious dinner.
Other than cooking and doing a little packing, it’s been a quiet day. I found some time to sit and read for a while, although I did more listening to the rain than reading. The cats and Bo the Dog have been lazing around, too. It’s a good day for that. They’ve been getting on so well that I wouldn’t be surprised to find them all cuddled up together.

What a perfect, relaxing Sunday Robin. The sunset is just beautiful. It occured to me that Izzy and Bella may, or may not, move home with you. Do you plan on taking them with you? Enjoy your dinner, it sounds delicious. 🙂

Thank you, Joanne. 🙂 Yes, Izzy and Bella are making the trip to the Eastern Shore with us. They are not going to like the long car ride (it’s about 9 hours, including stops for gas and such). I have a feeling M and I are not going to like the long car ride with them. There is going to be a lot of yeowing going on.

Thank you, Rosie. 🙂 Buffalo Cauliflower is cauliflower cut into florets, then dipped in a flour and water mixture (my daughter-in-law likes rice flower), and baked at 450 degrees for about 15 minutes (on a baking sheet spritzed with oil). Take it out of the oven, brush your favorite Buffalo Wing sauce on all sides, and then put it back in the oven for 5 minutes to get it crispy again. You can serve it with ranch or bleu cheese dressing or with more wing sauce. I think any barbecue sauce and most hot sauces would work just as well.

We got the rain here too, Robin; I managed to mulch 2 more garden beds before it came, so I could spend the rest of the day feeling virtuous 🙂 Sounds like you had a lovely day.

I really enjoyed that book, too, Cathy. I’m currently reading “Breaking Trail” about a woman mountain climber. I don’t usually read memoirs, but thought this one looked interesting.
